1. Aloo Chaat (Aloo Tikki Recipe)
If you’re looking to use leftover boiled potatoes, this aloo chaat recipe is perfect for you. Aloo chaat is a popular Indian street food containing little potato cakes (aloo tikki) covered with Indian chutneys and other toppings.

Ingredients:
- 3-4 boiled potatoes
- 2 tsp of rice flour
- 2 tsp of cornflour
- Yellow matar (peas)
- Curd (Yoghurt)
- Hari chutney (Green Indian chutney)
- Meethi chutney (Sweet tamarind chutney)
- Chopped onions
- Chopped coriander
- Roasted cumin powder
- Red chilli flakes
- Black salt and normal salt
Preparation:
Mix 3 to 4 boiled and grated potatoes, 2 teaspoons of rice flour, and 2 teaspoons of corn flour and salt. Mould the mixture into little potato cakes (tikkis) and shallow fry them until crisp.
Boil soaked yellow matar with salt and turmeric powder in the pressure cooker till 2-3 whistles. Then assemble the aloo chaat and pour the cooked peas over it.
Top up with dahi (curd), hari chutney, meethi chutney, chopped onions and coriander. Lastly sprinkle it with roasted cumin powder, red chilly flakes and black salt. Your aloo chaat is ready to serve.
2. Rice & Potato Cutlets (Potato Cakes Recipe)
This boiled potato cakes recipe is another version of the delicious aloo tikki recipe above, but this one contains rice. Aloo Tikki recipes are fast and easy-to-cook potato recipes for kids and adults alike.

Ingredients:
- 1 cup cooked rice
- ½ cup mashed potatoes or 1 medium to large potato
- 1 or ⅓ medium onion
- 1 green chili chopped
- 2 tablespoons coriander leaves
- 1 pinch turmeric powder
- ¼ teaspoon red chili powder
- ½ teaspoon cumin powder
- ½ teaspoon coriander powder
- ¼ to ½ teaspoon garam masala powder
- 3 tablespoon besan (gram flour)
- Salt as required
- 3 tablespoons oil for shallow frying
Preparation:
Boil, peel and mash the potatoes and finely chop the onion. For making the rice cake or cutlet mixture, take all the ingredients in a mixing bowl, except oil.
Mix very well. Check the taste and add more spice powders or salt if required. When you are mixing, the rice will also get mashed. Shape the mixture into small to medium-sized potato cakes or aloo tikkis.
Heat 3 tablespoons of oil in a frying pan or tawa. When the oil becomes a bit hot, place the rice and potato cakes on the tawa. When the base is lightly browned, flip them and fry the other side.
Flip again and fry till they are crisp and golden. When nicely crisp and golden, remove them and place them on kitchen paper towel. Serve rice-potato cakes hot with coriander chutney or mint chutney or tomato ketchup.
3. Potato Wedges (Aloo Fry Recipe)

Ingredients:
- Potatoes (cubed)
- Cold water
- Turmeric powder
- Red chilli powder
- Besan (gram flour)
- Oil for frying
- Onion (for garnish)
- Green chilli (for garnish)
- Salt
Preparation:
Peel the potatoes and cut them into cubes. Then, soak them in cold water till the water becomes cloudy to remove the starch in the potatoes. Then, soak the potatoes again in a fresh bowl of cold water.
Boil water in a pan. Add a pinch of salt to the boiled water. Then, put the potatoes into the boiled water. Let the potatoes soak in the warm water and salt.
Mix the potatoes with turmeric powder and red chilli powder according to your taste. Now, heat the pan. Pour the oil and fry the cubed potatoes till they become crispy.
For the garnish, take a green chilli and onion. Cut the onion in a round shape and mix them with salt, besan, turmeric powder, and chilli powder.

- 4 raw potatoes
- 2 tbs spoon cornflour
- Salt
- Black pepper
- Oregano or mixed herb spice
- Oil for frying
Preparation:
Peel the potatoes and grate them coarsely. Wash the grated potato 3 to 4 times and let it sit in ice-cold water for 15 minutes.
Drain the water and dry the grated potato on a clean muslin cloth or kitchen towel. Add salt, black pepper, mixed herb/oregano and cornflour to the potatoes. Mix well.
